Sage-Crusted Turkey Tenderloin

WW Comments: Sage-crusted turkey tenderloin is versatile enough for weeknights and small holiday gatherings when served with Brussels
sprouts and wild rice pilaf.
Amy's Comments: A cinch to whip up and very tasty. I overcooked so it was dry, but it was still really tasty!
INGREDIENTS:
1/4 cup coarsely crushed cornflakes
3 tbsp finely chopped fresh sage
3 tbsp shredded three-cheese blend (such as Kraft)
1 (1-lb) package turkey tenderloins
1 tbsp reduced-calorie margarine, melted
1/4 tsp salt
cooking spray
sage sprigs (optional)
INSTRUCTIONS:
- Preheat oven to 425.
- Combine first 3 ingredients in a shallow dish. Brush turkey with
margarine; sprinkle with salt. Dredge turkey in corflakes mixture,
coating well. Place turkey on a baking sheet coated with cooking
spray. Bake at 425 for 25 minutes or until meat thermometor
registers 170. Garnish with sage sprigs, if desired.
