Rum Balls

These are from Jim and Dee and are GREAT!!!


INGREDIENTS:
1 1/2 cups confectioner’s sugar, divided
2 Tablespoons cocoa powder
1/2 cup dark or light rum
2 Tablespoons light corn syrup
2 1/2 cups finely crushed vanilla wafers
1 cup finely chopped toasted walnuts or pecans

DIRECTIONS:

  1. Into a large bowl, sift together 1 cup of the confectioner’s sugar and the cocoa powder. Stir in the rum and corn syrup. Stir in the vanilla wafers and walnuts (or pecans), mix well.
  2. Place in the refrigerator to firm up slightly, about 30 minutes. (The mixture may appear crumbly and dry – this is ok).
  3. Place the remaining 1/2 cup confectioner’s sugar in a shallow bowl or dish.
  4. Using a tablespoon, scoop out portions of the chocolate mixture and roll into 1” balls. Roll the balls in the confectioner’s sugar coating evenly.
  5. Store in an airtight container in the refrigerator for up to two weeks, placing waxed paper between layers to prevent sticking.
