Peanut Chocolate Chip Blondies

INGREDIENTS:
1 c. all purpose flour
1/4 c. mini chocolate chips
1/4 tsp baking soda
1/8 tsp salt
3/4 c. sugar
1/4 c. packed dark brown sugar
1/4 c. creamy peanut butter
1 T. canola oil
1 egg
1 egg white
1 tsp. vanilla
INSTRUCTIONS:
- Preheat oven to 350.
- Coat bottom only of an 8 x 8 baking pan with cooking spray.
- Lightly spoon flour into a dry measuring cup; level with a knife. (DO NOT SCOOP flour and do not pack it in the cup. Use a spoon.)
- Combine flour, chips, baking soda, and salt in a small bowl.
- Combine sugars, oil, eggs, and vanilla in another bowl. Stir until well blended. Add flour mixture, stirring until just blended.
- Spread batter (it will be very thick) in bottom of prepared pan.
- Bake at 350 for 25 minutes or until a wooden pick inserted in the center comes out almost clean. Cool on a wire rack; cut into 16 pieces.
