Mini Frittatas with Ham and Cheese

Yield: 24 frittatas (serving size = 3 frittatas)

Cooking spray
1/2 c. finely chopped onion
2/3 c. chopped reduced fat ham (about 2 oz)
1/3 c. (about 1 1/2 oz) shredded reduced fat extra sharp cheddar cheese
2 T. chopped fresh chives
1/8 tsp. dried thyme
1/8 tsp. black pepper
4 large egg whites
1 large egg


  1. Preheat oven to 350.
  2. Heat a large nonstick skillet coated with cooking spray over medium high heat.
  3. Add onion; saute 2 min or until crisp-tender.
  4. Add ham; saute 3 min. Remove from heat; cool 5 min.
  5. Combine cheese and remaining 5 ingredients in a large bowl; stir with a whisk.
  6. Add ham mixture, stirring with a whisk. Spoon ham mixture into 24 mini muffin cups coated with cooking spray.
  7. Bake at 350 for 20 min or until set.
